Ingredients

Ginger, thumb-sized

Peas
400 Grams
Mint
50 Grams
Vegetable stock
750 Millilitres
Salt
1 Pinch
Pepper, freshly ground
1 Pinch
Nutmeg, freshly ground
1 Pinch

Steps

  1. Sweat onion, garlic and ginger with some oil in a pot.
  2. Finely chop the mint and put it into the pot together with the peas.
  3. Add vegetable stock and let it simmer until peas are soft.
  4. Take out some peas, purée the rest and season to taste.
  5. Put some peas into each soup plate and fill up with soup. Garnish with mint leaves.
  6. Enjoy!
